THE HISTORY OF PHO
Late 19th century
During the French colonial period, French beef stew (pot-au-feu) and Vietnamese pho noodles laid the foundation for Pho.
1900–1913
Pho appeared through street vendors carrying pho in Hanoi, priced at 2–5 cents per bowl, and was taxed.
1910
Mr. Huỳnh created pho in Marseille, France, combining beef soup with Vietnamese spices. The name “Pho” comes from “phô phô” (to ignite fire).
1930
Pho is recorded in the Vietnamese Dictionary. The first “train” Pho restaurant opened in Da Lat.
Before 1940
The Pho Túc shop in Saigon attracts French customers, Southern-style phở with added herbs and bean sprouts.
After 1954
Pho spread into the South, Northern pho is light and delicate, Southern pho is rich and flavorful.
After 1975
Phở has become a global iconic dish according to Vietnamese migrants.
Today
Pho is popular worldwide, with some Hanoi eateries preserving the traditional cooking method.

FROM THE BATTLEFIELD TO THE KITCHEN – THE JOURNEY OF CHEF TAN
Born in Vietnam, raised in the US, and having served as a Staff Sergeant in the United States Army for over 20 years, Mr. Tan experienced intense campaigns in Iraq, Afghanistan, and Germany. After leaving the military, he chose a new mission – not with weapons, but with a love for Vietnamese pho.
Starting from a childhood passion for cooking, he founded Pho Central with the desire to spread the traditional flavors of Vietnam to the Vietnamese-American community. Every bowl of pho here represents a cultural connection, healing, and the continuing spirit of service from a soldier – now turned chef.
